THE DAY I STOPPED THINKING of vegetables as just a “dinner thing,” my vegetable consumption skyrocketed. This broccoli frittata, for example, works equally well as a healthy breakfast, a simple lunch alongside a green salad, or cut into strips as a party appetizer. It tastes good at room temperature and reheats well, too, so you can nosh on leftovers for an afternoon snack. Pepper Jack melts well and has tons of flavor, but you can substitute another cheese with less of a kick.
